Achaari Paneer

Ingredients (4 servings):
300gms Paneer
2 cups Onion
1tbsp Mustard Seeds
2tbsp Cumin Seeds
2tbsp Oil
2tsp Chilli Powder
1/2tsp Turmeric Powder
1 1/2tsp Black Salt
Salt to taste

Method
Mix mustard seeds and cumin seeds in a bowl. Heat oil in a pan and add the seed mixture to it. As they start crackling, add onions to it and sauté them till they turn pink. Add chilli powder, turmeric powder and paneer and stir for a while. In the end, add a dash of salt to the dish and bring to a boil. Tada! We are done!

Anda Curry

Ingredients (4 servings):
6 Boiled Eggs
2 Medium Tomatoes
2 Medium Size Onions
2tsp Ginger
5-6 Garlic Cloves
1/2tsp Turmeric Powder 
2tsp Red Chilli Powder
1tsp Coriander Powder
1/2tsp Garam Masala
2tbsp Oil
Salt to taste 

Method
Heat two tablespoons of oil in a pan. Add chopped onions, ginger and garlic paste to it and sauté till the onions turn pink. Now, add some turmeric powder, red chilli powder, coriander powder and garam masala and stir nicely. Later, add the tomato puree, salt and boiled eggs. Leave the anda curry to boil for 10 to 15 minutes. Voila!

Bhindi Fry

Ingredients (4 servings):
500gms Bhindi
3 Medium Size Onions
3 Green Chillies
2tsp Cumin Seeds
1/2tsp Turmeric Powder
2tsp Red Chilli Powder
2tsp Coriander Powder
3tsp Oil
Salt to Taste 

Method
Cut the bhindi into two-inch-long pieces after nicely washing and drying them. Take a kadai and heat some oil in it. Add cumin seeds. Then, add onions to the mix and sauté them until they turn light golden. Add green chillies and sauté them for under a minute. Now, add bhindi to it followed by turmeric powder, coriander powder, salt, and red chilli powder. Stir well. Let it cook for two minutes on a high flame when the bhindi is almost done. 

P.S. You can add amchur to the recipe to make it tangy and more yummy.

Lemon Chicken

Ingredients (4 servings):
1kg Bone-in, skin-on Chicken pieces
1-piece Lemon
2tsp Olive Oil
1/2tsp Pepper
1/2tsp Salt 

Method
Heat oven to 200° C. Season the chicken with ½ teaspoon each of pepper and salt. Heat olive oil in a large skillet and cook the chicken pieces for 5 to 6 minutes each side (until they turn golden brown). Now, transfer the chicken to a rimmed baking sheet and bake it in the oven for 15 to 20 minutes. Add lemon slices to the skillet and cook for 1 to 2 minutes per side until golden. Add some olives to it and serve over the chicken. Yum, isn’t it?

Jeera Aloo 

Ingredients (4 servings):
4 Medium Sized Potatoes
1tsp Crushed Coriander Seeds
1tbsp Cumin Seeds
1tsp Dry Mango Powder
1tsp Roasted Cumin Powder
2tsp Red Chilli Powder
Coriander Leaves to sprinkle 
2tbsp Oil 
Salt to taste  

Method
Take a pan and heat some oil. Now, add cumin seeds to it and sauté till it becomes slightly brown. Add salt to it and mix well. Add dry mango powder, roasted cumin powder, crushed coriander seeds and red chilli powder to it. Add boiled potato cubes to the mix and stir well so that the masalas cover all the cubes nicely. Add coriander leaves and the dish is ready to be served. Attack!!
