Until some years ago healthy bowl recipes were not a part of the Indian culinary scene. But ever since we realised how versatile and absolutely delicious these recipes can be, the bowl recipe food trend picked up in India as well. 

For me, the best part about these healthy meals in a bowl is that you can literally do almost anything with them. Make your own combinations, keep things nutritious and you are set. Not to mention, they are a feast to the eyes and the Instagram feed as well, isn’t it?

Organise get togethers with your gang and try some of my favourites to kick off your healthy meals in a bowl. 

1. Whole Oats Flakes Power Bowl
This gastronomical delight bowl has everything nutritious for your body and soul. It packs whole oat flakes as a carbohydrates source and peanuts and mixed legumes for the proteins. Plus, you can put plenty of veggies for vitamins and minerals. Remember to soak the legumes overnight and pressure cook in fresh water with a little salt. The oat flakes can be soaked for 10 minutes and cooked with veggies for about 5 minutes. Later, combine all the ingredients in a bowl and dig in.

2. Brown Rice Power Bowl
For this divine bowl meal, you need simple ingredients like brown rice, red kidney beans, avocado, onions, cucumbers, carrots and lime juice. Start by pressure cooking rice. Soak some kidney beans overnight for a few hours. Pressure cook it with a pinch of salt for about 3 whistles. Take a medium-sized avocado and mash it to make a pulp. Combine the remaining ingredients with the avocado pulp and garnish it with coriander leaves.

3. Potato Soya Power Bowl
This power-packed bowl meal includes ingredients such as soya chunks, potatoes, flax seeds, tomatoes, lettuce, and beetroot. Cut the potatoes into wedges and boil them in salted water. Boil soya chunks in water for about 15 minutes. Drain, squeeze and rinse them with fresh water. Arrange them with other ingredients in a bowl and garnish with celery leaves. You can also add lime juice and red chilli flakes on top if you like it spicy.

Chicken Enchilada Bowl
All it takes is 20 minutes to make this mouth-watering Chicken Enchilada Bowl. You need ingredients like onion, garlic, zucchini, carrots, chicken, enchilada sauce, chillies, corn tortillas and cheese. Just saute all the veggies till they become tender and stir in the chicken till it is cooked well. Add the contents in enchilada sauce, cumin and green chillies. You can add cheddar cheese and corn tortillas in the end. Serve it over rice or anything else you desire. Happy eating!
